Salad with baked chicken breast — recipe

Want a new salad? All fed up or want to surprise your guests at the festive table? Prepare a salad with chicken and oyster mushrooms. Products are available, it is not difficult to cook, and the taste is exquisite and very different from the usual salads.

Mushrooms are perfectly combined with the breast, which we pre-bake, and pesto sauce will give completeness to the dish. By the way, we will offer an interesting alternative to this sauce and options for additives in this salad.

Chicken (breast) – 1 piece (weight about 800 grams)
Dry garlic - 0.5 tsp
Garlic clove – 1 piece
Soy sauce – 2 tablespoons
Cucumber – 0.5 kg (two medium cucumbers)
Pesto sauce – 150 gr
Salt, black pepper
Oyster mushrooms – 300 gr
Green onions – 2-3 feathers
Leaf salad – 200 gr
Mozzarella cheese – 120 g
Chicken breast cut from the bone. If you take a ready fillet, skip this step. RUB the meat with salt, pepper and dry garlic (it is necessary for rubbing, fresh pressed is not suitable, it will burn when baking).

Put in a baking dish. And put it in the oven, preheated to 200 degrees. The breast will be baked for about 20 minutes. That will be enough. If you overdo it, it will be hard and dry. You can check by piercing a piece with a knife. Juice runs clear – ready, cloudy or pus – hold a little more in the oven.

While the meat is baked, prepare oyster mushrooms. Cut the mushrooms into small pieces. If you have small mushrooms, you can leave whole. The pieces should be about 2 x 1.5 cm in size.

In a wok pan, heat 2 tablespoons of vegetable oil. Fry the mushrooms in small batches quickly, just a couple of minutes until Golden brown. If you fry everything at once, they will not fry, but stew. We don't need that. They will become "rubber", ugly and tasteless.

Oyster mushrooms are ready put in a bowl. Chop onions and garlic. Garlic can be passed through the garlic Supplement. In wok again, put the mushrooms, onion and garlic. Fry for one (!) minutes, stirring constantly. If you fry longer, garlic flavors will distort and will not be the same as you need for this salad.

Now pour in the soy sauce, let it boil. Stirring, cook for another minute. Remove from heat.

Cucumbers cut into small slices. Mozzarella into pieces about the size of 1.5 x 1.5 cm If you have mozzarella balls, they are just cut in half. Hemispheres, by the way, look spectacular in a salad bowl, but the taste is not affected.

By this time the breast will be ready. Remove it from the oven, allow to cool for ten minutes and cut into slices.

Proceed to Assembly. In a salad bowl large pieces of torn lettuce. You can take one class or several. Very nice looks salad mix. This is when you take a green leaf, Lolla Ross and watercress or arugula.
